Medieval fortresses, Roman roads, and ancient abbeys

Carcassonne Medieval City

Europe's largest intact medieval fortified city and a UNESCO World Heritage site. The Cité features 52 towers and 3km of double ramparts encircling cobbled streets, shops, and restaurants. Entry to the Cité is free and open 24 hours; the real magic comes early morning or after sunset when crowds thin and golden light illuminates the ancient stones. For the full experience, pay to enter Château Comtal (1 hour guided tour plus self-guided rampart walk). Climb the towers for panoramic views over the Aude river and Pyrenees. Don't miss the Basilica of Saint-Nazaire with its stunning medieval stained glass, or a stroll across the 14th-century Pont Vieux footbridge at sunset. The lower town (Bastide Saint-Louis) has excellent markets and authentic restaurants away from tourist prices. In summer (mid-July to mid-September), the 'Remparts et Lumières' night walk offers a magical 45-minute sound and light experience along normally closed sections of the ramparts. Book ahead.

Narbonne

A historic city with over 2,500 years of history, once the first Roman colony in Gaul and more important than Rome itself. Start at Place de l'Hôtel de Ville where you can descend steps to walk on the original stones of the Via Domitia, the Roman road connecting Italy to Spain (free, 15 mins). Chariot wheel grooves are still visible. The imposing Archbishop's Palace complex houses two museums and a 14th-century keep with tower views over the city (allow 1–2 hours). The unfinished Gothic Cathedral of Saint-Just towers over the old town, only the choir was completed, yet it's one of the tallest in France. For a modern take on Roman history, walk along the Canal de la Robine (30 mins each way) to Narbo Via (website), the stunning Norman Foster-designed museum showcasing 6,000 Roman artefacts including an extraordinary 760 piece Lapidary Wall (allow 2 hours). Don't miss the Roman Horreum, underground storage tunnels from the 1st century BC (30 mins). Finish with lunch at Les Halles de Narbonne.

Minerve

Listed among the 'Most Beautiful Villages of France,' Minerve is perched on a rocky outcrop at the meeting of two gorges. Site of the tragic Cathar siege in 1210. Preserved stone houses, arched bridges, quaint restaurants, artisan shops, and local wine tastings. The natural stone bridges below are worth the descent.

Béziers & Cathedral Tower

Cathédrale Saint-Nazaire dominates from its hilltop. Climb 165 narrow spiral steps (free, donation appreciated) for 360° views city rooftops, ancient Pont Vieux bridge, Corbières mountains, Mediterranean plain. Not for the faint hearted! Tower closed during lunch. Combine with Les Halles market and Fonseranes Locks.

Château de Quéribus

One of the most striking Cathar fortresses, standing dramatically atop a rocky peak at 728m altitude. Once a last refuge of the Cathars, its windswept position gives breathtaking panoramic views to the Pyrenees and Mediterranean. Wear sturdy shoes.

Quéribus, Peyrepertuse & Gorge de Galamus

Combined excursion for history and nature lovers. Château de Peyrepertuse, the 'Celestial Carcassonne,' is a vast ruined fortress perched along a jagged limestone ridge (1.5 hours). Finish at the Gorge de Galamus breathtaking canyon where cliffs soar above turquoise waters.

Fonseranes Locks

Engineering triumph of the Canal du Midi, a cascading series of oval shaped locks that allow boats to climb a steep gradient. Watch boats navigate the staircase of water (20–30 mins), then enjoy a pleasant 2km walk along the canal into the heart of Béziers.

Fontfroide Abbey

One of the largest and best-preserved Cistercian abbeys in France, founded in 1093. The honey-coloured stone buildings nestle in a peaceful valley surrounded by cypress trees and Mediterranean gardens. Explore the Romanesque cloister, Gothic church, and stunning rose garden. The abbey hosts concerts in summer and has a wine shop selling wines from their own vineyards. A place of profound beauty and tranquillity.

Caunes-Minervois & Abbey

Famed for its 8th-century Benedictine Abbey with cloisters, crypts, and ornate carvings. Surrounding quarries of red marble once used in Versailles. Charming wine bars and a welcoming tapas restaurant in the medieval streets.

Termes Village & Gorge

Small Corbières village tied deeply to Cathar history besieged in 1210. Flower-lined streets, old stone houses, castle remnants. The Gorge de Termes beyond features dramatic limestone cliffs and shady walking paths.

La Caunette

A fortified village once designed to protect Minerve, retaining its medieval lanes, fountains, ancient Romanesque church, and stone passageways. Also home to a well loved restaurant.
